We had a small Easter dinner with the Cates after church on Sunday late afternoon. Instead of fixing a ham, we chose to fix pork tenderloin since it was just the four of us. We also had roasted fingerling potatoes, bread, and a pear, goat cheese salad with a balsamic vinaigrette. We used our china, Lenox Spring Vista, which always makes a dinner feel more special. After we recovered from a delicious dinner, we enjoyed a mixed berry cobbler and ice-cream for dessert.
