Breakfast on the go

Let me begin by saying how much I love Pinterest.  It has made weekly meal planning so much easier and fun!

I found a great recipe for breakfast cookies.  They have no dairy, sugar or flour in them.  Once I heard this, I had to try them.  Marty is not the best at planning to get up with enough time to shower, dress and eat breakfast.  These cookies are great to grab on the go, and he can also take them to class as a snack.

All you do is combine 1 1/2 cups oats, 1 cup of unsweetened applesauce, 2-3 ripened bananas, a handful of craisins or raisins and cinnamon.  Then you bake them at 350 for 35 minutes (spray the pan because they have a tendency to stick).  One batch makes 12 big cookies, and each cookie is 1 weight watchers point (I assume that is healthy).  I store them in the fridge because of the banana.
